No matter how often people say fufu is calorie-heavy and smells, its still one of my favorite swallows to quickly eat with a hot plate of Ogbonno, Bitterleaft Soup or Egusi Soup with many obstacles and can do no wrong in my eyes.
Fufu goes by many names depending on the region. You’ll find cassava fufu, or plantain fufu in Nigeria. In Ghana, banku, kokonte, or fufu made from a blend of cassava and plantain is more common.
Fufu is beautiful in my eyes (you can tell that I love swallows right 😅), easy to grab, and goes with any stew or soup of your choice.

What Is Fufu? And How Is Fufu Made?
Fufu is a traditional West African staple food made by boiling and pounding starchy ingredients like cassava, yam, plantain, or cocoyam into a smooth, stretchy dough. It’s often eaten with soups or stews, pinched by hand, and shaped into small balls for scooping.
The process involves peeling and washing the cassava, soaking it for fermentation, then drying and grinding it into a flour. This flour is then cooked into a smooth, thick paste, which is typically eaten with a variety of soups.
In Nigeria, the most common type of fufu is the one made with cassava. Here's how it's made from scratch.
Peeling and Washing:
The raw cassava roots are peeled and washed thoroughly to remove dirt and debris.
Soaking and Fermentation:
The peeled cassava is then soaked in water for a period of time, typically 4-6 days, to allow it to ferment. This fermentation process is crucial for detoxification and enhances the flavor and texture
Drying and Grinding:
After fermentation, the cassava is dried, either by sun-drying or using a dehydrator. It's then ground into a fine powder, which is the cassava flour used for making fufu.

Fufu and Okra Soup: A blend of chopped Okra sticks and mixed with ponmo, stockfish, beef, chicken, shaki, and many other ingredients. You should try this combo if you haven't yet.
How to Store Fufu at Home
If you have Instant fufu flour, Store in a cool, dry pantry and seal tightly after opening.
Frozen fufu, keep in the freezer and microwave before serving.
Cooked leftovers: Wrap tightly in plastic or airtight container and refrigerate for up to 2 days.
